Peach Yogurt Muffins Breakfasts
Try something new with your summer baking: mix in yogurt for added moistness and texture

- 1 cupwhole wheat flour
- 3/4 cupcup instant oats
- 1/3 cupoat bran
- 3 tsp.baking powder
- 1 tsp.ground cinnamon
- 1/2 cupstewed apples and peaches
- 1/2 cup Olympic Organic plain yogurt
- 2/3 cupmilk (soy, almond or rice if you like)
- 2 tsp.vanilla essence
- 1 egg
- 1 cupdiced fresh peaches
Preheat oven to 350°F.
In a bowl, mix the flour, oats, oat bran, baking powder and cinnamon. Set aside.
In another bowl, mix the stewed apples and peaches, yogurt, milk, vanilla and egg.
Stir the wet mixture into the dry mixture until it forms dough. Stir in the fresh peaches.
In a greased or lined muffin tin, pour the dough in 3/4 of the way. Bake 20–25 minutes, until the muffins are golden.
To add even more yogurt, cut your muffin in two and add a tablespoon.
