A classic! Serve with yogurt guacamole.

Ingredients

GUACAMOLE

  • ½ cup (122 g)Olympic Krema plain yogurt
  • 2 avocados, crushed
  • 1 shallot, finely chopped
  • Zest and juice of 1 lime
  • Salt and pepper

FAJITAS

  • 3 tbsp (45 ml)olive oil
  • 3 boneless chicken breasts, cut into strips
  • 1 red pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 2 onions, minced
  • 1 tsp (5 ml)ground cumin
  • Salt and pepper

GARNISH

  • Olympic Organic Sour Cream
  • Pico di gallo
  • Salsa
  • Fresh coriander
  • Grated cheddar
  • Tortillas

Preparation

  1. For the guacamole, purée all the ingredients in a blender until smooth.
  2. Set aside.
  3. For the fajitas, heat oil in a frying pan and brown the chicken.
  4. Add the remaining ingredients and sauté.
  5. Season with salt and pepper.
  6. Just before serving, garnish the fajitas, to taste.
