A classic! Serve with yogurt guacamole.
Ingredients
GUACAMOLE
- ½ cup (122 g)Olympic Krema plain yogurt
- 2 avocados, crushed
- 1 shallot, finely chopped
- Zest and juice of 1 lime
- Salt and pepper
FAJITAS
- 3 tbsp (45 ml)olive oil
- 3 boneless chicken breasts, cut into strips
- 1 red pepper, cut into strips
- 1 yellow pepper, cut into strips
- 2 onions, minced
- 1 tsp (5 ml)ground cumin
- Salt and pepper
GARNISH
- Olympic Organic Sour Cream
- Pico di gallo
- Salsa
- Fresh coriander
- Grated cheddar
- Tortillas
Preparation
- For the guacamole, purée all the ingredients in a blender until smooth.
- Set aside.
- For the fajitas, heat oil in a frying pan and brown the chicken.
- Add the remaining ingredients and sauté.
- Season with salt and pepper.
- Just before serving, garnish the fajitas, to taste.
